Grape variety: CHARDONNAY 80% - FIANO OF PUGLIA 20%
Production area: Lucignano - Taranto

Soil: medium clayey mixture
Yield per Ha: from 8.000 to 10.000 Kg.
Vinification: The destemmed grapes are positioned in stainless steel vats with separating grilles for 24 hours at a low temperature (cryomaceration) before being softly pressed.
The so obtained must has a spontaneous decantation for 8-12 hours, and afterwards the fermentation starts at a controlled tempera¬ture which doesn’t exceed 16-18°c. At the end of the fermentation the wine is kept for a short period on the total yeast and then it will be kept on a light level of yeats until the arrival of the Spring. The final step is to put the wine into the bottles.
Harvest: completely by hand, between September and October
Serve at 8°-10° C

SENSORY ANALYSIS

  • Colour: straw yellow with a deep brightness.
  • Bouquet: Fine and pleasantly fruity, a neat aroma of while flowers, crust of bread and green apple.
  • Taste: Dry and harmonic, very fresh and lively with a great agreeableness and an excellent persistence.

NAME'S ORIGIN:
The name of the wine comes from the land of Tenuta Zicari where the grapes grow. The production area has a particular climate during autumn’s months. The inhabitants say that every year in September a “soft” wind blows, this wind makes you feel like leaving work and dance. “Soft” in Italian can be translated with the word “fievole” and from this word comes the name of this area, Fievo. The taste of this wine recalls all the perfumes of the harvest brought by this soft wind.
