Vinification:
Grapes, pressed and destemmed, are positioned in the maceration vats at a temperature of 24-27°C for the alcoholic fermentation. The maceration goes on for a total period of 12-15 days alternating the pumping over, punching-down and the delestage (rack and return) At the wine rack moment the wine is put into stainless steel vats with a controlled temperature (17-19°C) where there will be the malo-lactic fermentation.
Harvest: completely by hand between September and October
Serve at 16°-18° C

SENSORY ANALYSIS

  • Colour: Ruby Red with violet tints
  • Bouquet: fine and harmonic in its perfumes: small fruits, cinnamon,clove, persistent with varietal sensations.
  • Taste:Supple and elegant, well structured and intense, with a persistent tannic weave, but not exaggerate and intrusive.

NAME'S ORIGIN
The name of this wine comes from the land of Tenuta Zicari where the grapes grow. The ancient inhabitants of this place remember an old legend: Diago’s lands belonged to a very rich man who every day rode through the lands and called each farm worker by his name. This man had no sons and so he decided to give to each of his farm workers the part of the land they worked. So the name Diago became a synonym of generosity. And so generous is the wine made by these grapes.
