Vinification: Grapes, pressed and destemmed, are positioned in the maceration vats at a temperature of 24-27°C for the alcoholic fermentation. The maceration goes on for a total period of 12-15 days alternating the pumping over, punching-down and the delestage (rack and return) At the wine rack moment the wine is put into stainless steel vats with a controlled temperature (17-19°C) where there will be the malo-lactic fermentation.
Harvest: completely by hand between the first and the second week of October
Serve at 16°-18° C

SENSORY ANALYSIS

  • Colour: Deep Garnet Ruby Red.
  • Bouquet: intense with mature red fruits aroma, dried fig and sultana, with a finish of cinnamon and tobacco.
  • Taste: Dry, well-orchestrated and fruity, pleasantly tannic with a long after aroma.

NAME'S ORIGIN
The name of this wine comes from the land of Tenuta Zicari where the grapes grow, named Calabrìgo. The legend says that in the middle of this area there was a peer tree (in the local language it is called Calabrìgo).
In the springtime the tree was so full of beautiful flowers and fruits that women left working the fields to see it. In November they came back to celebrate Saint Cecil and the beginning of the new year of work in the fields.
Donna Ines Zicari found this legend and she decided to change the tree, too old and not fertile any longer, into a statue of Saint Cecil.
The statue was given to the Cathedral of Taranto, where, every year, the 22nd November, it is carried by hand through the streets of the old city, where everyone can see and follow it.
