Our olive oil originated in Apulia, in Massafra area, near Taranto. It is obtained from a particular mixture of native “cultivar” that have been here since ancient times, probably dating back to the Romans. The majority of plants are very old with wooden sumps and a roundish foliage. Any mechanism process, from the picking to the pruning, is useless. Hand picking is the only system used. Even though the management costs are more, the product guarantees an excellent quality with low acidity and unique organoleptic characteristics. The altimetry of the olive groves and the excellent exposure towards the south guarantees the slow and constant maturation.
